Vegan Chocolate valentines cupcakes

Vegan Chocolate Valentine’s Day Cupcakes
Makes about 10

Ingredients
1 cup almond milk ( you can use vanilla)
1 teaspoon apple cider vinegar
3/4 cup  organic cane sugar
1/3 cup canola oil
2 teaspoons  organic vanilla extract
1 cup all-purpose flour ( I used a gluten free blend)
1/3 cup cocoa powder
3/4 teaspoon baking soda
1/2 teaspoon baking powder
pinch salt

Method | Preheat oven to 350°F and line a muffin pan with paper. Whisk together the almond milk and vinegar in a large bowl, and set aside for a few minutes. Add the sugar, oil, vanilla extract to the almond milk mixture and beat for about 2 min.. In a separate bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt. Add in  wet ingredients and beat until no large lumps remain, you may have a few lumps.
Pour into liners, filling almost all the way full. Bake 20 to 22 minutes, until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and let cool completely.

Vegan Butter-cream Frosting

Ingredients
1/2 cup vegan butter ( I used Vegan earth Balance butter)
2 cups powdered sugar
1 teaspoon Organic vanilla extract
1/2Tbs. to 1 Tbs  coconut milk
20 or a few more drops red food coloring

 Beat the butter until fluffy in a large bowl so it doesn’t fly out. Add the sugar in batches and the coconut milk beat for about 3 more minutes . Add the vanilla,  and food coloring, and beat for another 5 to 7 minutes until fluffy.
