Vegan Baked Ziti
What you will need:
1 lb. whole wheat ziti, or ( 16 oz. Brown Rice Pasta Gluten Free Ziti) cooked and drained
 1 pkg. Boca ground crumbles
  1/2 cup shredded vegan  mozzarella cheese and 1/4 cup vegan shredded mozzarella cheese for topping
1/4 cup organic parsley, rinsed and chopped fine
1 can organic tomato sauce
1 to 2 cans diced organic tomatoes
 1 small organic onion chopped
2 cloves of garlic minced
2tsp. organic oregano
1tsp  organic pepper
1tsp. organic sea salt
1tsp. organic crushed red pepper flakes
1tsp. organic chili powder
1/2 tsp. organic paprika
1 1/2 tsp. ( I use a spice blend organic Oregano, basil and tomato)
Cold pressed olive oil
Directions:
Preheat oven to 350
In a heavy skillet on med. heat  drizzle olive oil, add your onions and cook until clear, add your garlic, oregano, pepper, salt, crushed pepper flakes, chili powder, paprika and your spice blend, cook for about 2 min., and enjoy the aroma..
Add to the spice, and onion mixture the Boca crumbles, tomato sauce, and diced tomatoes. Bring to a boil.  Let simmer so all the ingredients can come together for about 15 min.
I rinse my cooked noodles a bit before adding to the mixture so they don't stick together,  place the noodles in a large bowl, fold in the sauce, add the parsley, and the 1/2 cup of vegan shredded mozzarella cheese. place in a glass baking dish, cast iron pot, or a baking dish and if you don't have a lid, use aluminum  foil to cover. Bake for 25 min, or until bubbly. Top with remaining cheese, and cook for another 5 to 7 min uncovered. I add fresh parsley for a garnish
You can serve this with a small side salad of your choice

  1. I have never tried vegan cheese, does it really taste like cheese or is it completely different? I love garden burgers but I don't think they taste like actual burgers... but I don't like actual burgers.

    you have to try these cookies, there are a lot of ingredients but it is a very simple recipe to follow. Just make sure that you flatten the cookies before you put them in the oven or they will come out looking like donut-holes not cookies. Very delicious either way!

    I was able to find all of the ingredients at kroger by the healthy section.

  3. Yes, Veggie cheese is the best! It is not as cheesy as dairy cheese, it does melt pretty well. I use the veggie cheese to thicken up my soups, we love the flavor.
