Vegetarian Quinoa Chili
Ingredients:
1/2-cup
quinoa, rinsed
1-cup
water
1-tablespoon
olive oil

small onion, chopped

cloves garlic, minced

jalapeno pepper, diced (only if you like it spicy)

large carrot, peeled and chopped

celery stalks, chopped

green bell pepper, chopped

red bell pepper, chopped

medium zucchini, chopped

(15 ounce) cans black beans, drained and rinsed

(15 ounce) can of white beans
1
(15 ounce) can red kidney beans, drained and rinsed

(15 ounce) cans diced tomatoes

(15 ounce) can tomato sauce

tablespoons chili powder, depending on your taste (I use just 2 tablespoons)
1-tablespoon
ground cumin
1tsp
paprika
Salt
and black pepper, to taste
Optional
toppings: green onions, avocado slices, vegan cheese
